Roasted Broccoli

Prep Time: 25 minutes (About 10 minutes hands-on time)

Meal Notes: I’ve never found an easier, healthier side dish than this spicy, lemony broccoli. It adds a welcome splash of green and a little kick to almost any meal, but it’s especially useful for busy weeknights.

Ingredients

  • 1 large head broccoli

  • 2 Tablespoons olive oil

  • 1 clove garlic

  • 1/2 teaspoon red pepper flakes

  • 2 Tablespoons lemon juice

  • Salt to taste

  • Pepper to taste

Directions

  • Prep Ingredients: Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil for easy clean-up. Cut broccoli into florets. Mince garlic.

  • Roast Broccoli: Place broccoli florets in medium bowl with all remaining ingredients and mix together. Dump broccoli out onto prepared baking sheet and spread evenly. Roast about 15 minutes, until tender.
